Rice Rolls

DH is a huge fan of rice and i dont  make it too often. 😀

However I am in constant search of combinations where rice is the hero and is also accompanied by other co-stars. On way to home from work, I decided to make these rolls.

All we needed was:

For rice-

1-1/2 Cup……………………….. Steam Cooked rice [I used basmati]

3 ………………………………….. Medium bell pepper halves roasted [I used the yellow, red and green]

Salt and pepper……………….. To taste

1-1/2 Tbsp ………………………Butter

2 Tbsp…………………………….Kasuri Methi [Roasted in an open pan]

Method-

  • Heat butter in a wok.
  • Add the rice, salt and pepper.
  • Cut the roasted peppers in long slices and add to the rice
  • Add the methi, turn off the gas and cover with a lid till further use.

For Wrap-

I made skillet diameter size chapatis.

For the base on the chapati- [Mayo Substitute]

400-500 gms…………………………………….. Set Curd [Else use the normal curd]

2-3 tbsp……………………………………………. Maggie Hot and sweet ketchup

Method-

  • Hang the curd in a muslin cloth for about an hour to hour and a half.
  • Add the ketchup and stir. It shall start to resemble a pale pink color.

To Assemble:

1 packet……………………………………………. Chips of any flavour you liked [I used nachos]

Toothpick

Method-

  • Place the chapati on the plate
  • Spread the hung curd evenly [DH and I love it so we spread a lot 😀 ]
  • Place the rice in the center.
  • Crush some chips on top of the rice.
  • Fold the edges to form a roll, secure with a toothpick.

 

It is a child friendly recipe, as in can be assembled with your kids at the table.
