Pasta Salad with Yogurt Dressing

My recent obsession is ordering groceries online. I found the veggies offered by to be exceptional. Thanks to Nandita ji aka [@saffrontrail] I have become a regular there.

Yesterday I got this whole bunch of beautiful lettuce leaves and I just cant get enough of them. However for dinner on one of the weekdays we had a pasta salad and greens with a simple vinaigrette and garlic croutons.

For the pasta Salad you shall need: [fFeeds 2 with another side dish]

1/2 cup… Pasta of your choice. [I used elbow pasta]

1/4 cup… Yogurt

1/8th cup.. Olive Oil

4 tbsp… Coriander [finely chopped]

1/2 tbsp.. Honey

Juice of 1/2 a lemon

Pepper and Salt to taste


  • Boil the paste Al-Dente [It must have a slight bite to it] Keep aside
  • Whisk the yogurt and oil until smooth.
  • Add the coriander, lemon and honey.
  • Add seasoning as per your taste.
  • Mix the pasta in it. And voila.

Hope you like this creamy, sweet, salty and sour goodness.

This was the sweet dish element of the Gujarati Thali.

You shall need [Makes about 15-20 pieces depending on the size]

1 cup… Whole Wheat Flour

1/2 cup… Jaggery [powdered]

1/2 cup… Ghee

1 tbsp.. Poppy Seeds


  • Heat ghee on a slow flame in a non stick pan.
  • Once it is melted, add the flour.
  • Stir until combined.
  • Keep the flame to low.
  • The flour should start giving out a nice welcoming/cooked smell in about 7-10 min.
  • Let the flour turn light brown.
  • Take it off the flame and add the Jaggery.
  • Once it is combined, out back on flame to get rid of any jaggery lumps that might remain.
  • On a thali, spread a little ghee. You need to do this before hand as the mixture starts to thicken very quickly.
  • Pout the mixture on the thali and sprinkle poppy seeds on it.
  • Let it set.
  • Cut in pieces and serve.

Ghar ka Khana..!!

Last weekend it was like we had a marathon party.. 🙂

For me it started as I woke up on Saturday… and continued till I dropped dead at around 2 p.m on Sunday… Ohh it was an awesome time spent with all my wonderful wonderful friends..:)

We had invited all our friends for an overnight stay at our place on Saturday and had the entire menu already in place till Sunday lunch… So since I had to start the preparation for the dinner and the party, I prepared Gobhi Ke Paranthe as Brunch..

Thankfully Pallavi from Cook..Eat..Burpp… had brought along some superb starters & brownies for dessert which saved me from preparing those..;)

So getting on with the dinner, this is what we had…

Ambarsari/Amritsari Stuffed Kulcha

If you have ever been to Punjab, you shall know what I am talking about.

The butter lathered, spicy mix stuffed goodness from the tandoor served with kaali dal/chole [Chick pea gravy] is indeed to die for.

Usually it is made with Maida but since I was trying it at home, I mixed it half and half with Maida and Whole Wheat Flour.

You shall need: [Feeds 3-4 people]

For the Dough-

1.5 cup… Maida

1.5 cup… Whole Wheat Flour

1/2 tbsp… Salt

3 tbsp… Curd


For the Potato filling-

3… Medium Sized boiled potatoes

1… green chilly [finely chopped]


1/2 tsp… Chilly powder

1/2 tsp… Corriander powder

1 tsp… Amchur [Dry mango powder]

1/2 tsp… Ajwain/carom seeds

1 tbsp…Fresh corriander

1/2 tsp… Turmeric powder

For the Paneer filling-

1 cup… Grated paneer


2…green chilly [finely chopped]

Corriander leaves

For assembling-

Generous amount of butter melted/at room temprature

Sesame seeds

Dried mint leaves powder


  • Mix all the ingredients of the dough and add enough water to make a slightly sticky and loose dough.
  • Keep it aside for atleast 1.5 hours. Cover with a damp cheese-cloth.
  • Mix all the ingredients of both the fillings separately and keep aside until use.
  • Once the resting time for the dough has passed. Give it some kneading and make roughly about 8 equal size balls out of it.
  • Pre heat oven to 180 C.
  • Slightly flatten the dough ball and place the filling in the middle.
  • Seal it well and roll/flatten on a lightly floured platform sing a rolling pin/hand. [I used my palm]
  • For more details on how to stuff a paratha/kulcha refer this.
  • Once it is nice and flat, apply butter using a brush/the back side of a spoon and scatter some sesame seeds and mint powder.
  • Put on a slightly buttered baking tray and bake for about 14-15 min on the bottom and 5 min on top heat.
  • Serve with Paneer/chana/with achaar.

Well I was lucky to have Sheelu from Ghar ka Khana around to help so we had both paneer and chana 🙂

Chocolate cake with Peach Mousse

I made this came from my birthday 🙂 The combination of a moist chocolate [chip] cake with a peach mousse is mind blowing.

You shall need:

1… 7″ Moist chocolate chip cake

2/3 cup… Peach Puree [I used del monte tinned peaches]

1/3 cup… Peach cut in small pieces

1.5 tbsp… Unflavored gelatin

1 tbsp… Lemon Juice

1 cup… Whipping cream

1/4 cup… Caster Sugar

1/8th cup… cold water

Chocolate-vanilla pirouettes [Optional]


  • Cut the cake in half to make 2 layers and keep aside.
  • Soak the gelatin in the cold water until it blooms.
  • Sir the bloomed gelatin over boiling water until dissolved.
  • Add the gelatin, sugar, lemon and peaches together.
  • Whip cream until stiff peaks.
  • Fold the peaches in the cream and put in the fridge for about an hour.
  • Place one layer of the cake on the cake board and put 1/3 rd of the mousse on the cake and layer it well.

  • Put the 2nd layer on the mousse and cover the cake with the remaining mousse.

  • Place the cake in the fridge for an hour.
  • Before serving, break the wafer sticks in uneven lengths and stick around the cake.

Tortellini with Spinach and cheese

I saw how to make and shape a tortellini at a show. The show is called Raymond Blanc’s kitchen secrets. I am a huge fan of this chef and follow his advise closely.

I made this as a part of our Romantic meal oddesey on a weekday 🙂

You shall need: [Feeds 2, makes about 8-10 tortellini’s]


2 cup… Fresh Spinach leaves [washed and blanched for 30 sec in boiling salty water]

1/2 cup… Paneer/ricotta [Whichever you get]

1/4 cup… Cheese of your choice [I used cheddar]

1/2 tsp.. Salt [You might need little less of it, taste and then develop the flavour]


1 Tbsp… Olive oil

Eggless Pasta Dough-

1/2 cup… Semolina/rava [Fine one]

1/2 cup… maida/AP Flour

5-6 tbsp.. Water

1 tbsp… Olive oil

Pinch of salt

Herbed butter sauce-

2tbsp … Butter

Pinch of salt

1 tbsp… Sage


  • Combine the dough by adding 1 tbsp of water at a time.
  • We dont want to add too much water, because we cant take it back.
  • When the dough comes together, cover it with a damp cheese-cloth and keep aside for 30-35 min.
  • Heat olive oil in a pan and add the paneer/cheese and spinach.
  • Add the salt and pepper.
  • Cook until combined.
  • Keep away to be used later. Let it cook completely.


  • Make small-ish ping pong ball out of the dough and roll it very thin.
  • Use a round cutter and remove excess dough


  • Put some of the filling in the dough circle and fold the other half over the filling.


  • Press the sides properly so that they don’t open while cooking.
  • Hold the semi circle pasta in your hand and push the centre a bit on the inside.


  • Join the two ends of the pasta so that they stick together.
  • Keep aside until further use.
  • Boil water in a pot, make sure it is bubbling hot water.
  • Add the tortellini to the water.
  • Once they are done, they shall float on the water.
  • Take them out using a slotted spoon. Keep aside


  • In a pan, heat 2tbsp butter on a slow heat.
  • Add some sage (I used dried one)
  • Add the tortellini’s to the butter and coat them with the herbed butter.


Serve with love.

Happy Birthday to me :)

Yesterday was my birthday 😀

I move on to 29  and I am filled with memories that I have collected over the years.

  • Mom baked my first birthday cake [I know from the pics]
  • Dad took us all out station
  • we had a big family get together
  • I got my first tobo car
  • Mom made cake to be distributed at school
  • I had a younger sister to celebrate it with
  • I got Barbie doll’s house.
  • New clothes
  • Cards
  • Flowers
  • Money
  • More money
  • Best friend surprised me by coming all the way from Hyderabad
  • Friends sending gifts from across the nation
  • HUGE cakes

But this birthday was the most special one as DH and I spent it together. He took an off.

He made a breakfast. 🙂 Awesome gobhi paratha with raita. We then watched some tv, lazed, slept for sometime. Around 5ish we left to buy a gift for me. One thing turned to another and I got the new ipad [ipad3] as a birthday gift.

It was the most special birthday ever.

Maggi Stuffed bun

This is one of my old recipes and the one closest to my heart 🙂 This was the first invention from my kitchen in breads.

Here is all you shall need for the Dinner Rolls:

For the Bun:

3/4 Cup… Whole Wheat Flour

1/2 Cup… A.P. Flour/Maida

1 Tsp… Active Dry Yeast

1 Tsp… Sugar

1/4 Cup… Warm Milk

5 Tbsp…Warm Water

1-1/2 Tsp… Salt


  • Pour Half the milk in a smaller bowl, add the yeast and Sugar. Cover and put in a warm place for the time till it becomes frothy.
  • Put the flours in a bowl add the salt and make a small well in the middle.
  • Pour the yeast and mix the flours in it.
  • Add the remaining milk little by little and form a dough.
  • Place it on a clean slab, add little water at a time.
  • Make the dough like this

  • Put a little oil on the dough and keep aside in a warm place for at lease an hour. The Dough should have risen atleast twice the amount.
  • Keep it aside for sometime till use.

To make the Noodles.

You need:

1 Packet… Maggi/any instant noodles

1 Tbsp… Bhuna masala [I used ready made] You may also use veggies cut very small/cheese and oregano/Spring Onion and cheese – Various combinations are possible.

1 Tsp… Oil

Salt the taste


  • Boil instant noodles as per instructions.
  • Strain and wash under cold water.
  • Keep aside
  • Add oil in a wok, heat it. Add the bhuna masala and cook until it leaves oil.
  • Add the noodles and stir a bit until noodles are covered.
  • Add salt to taste and keep aside to be cool completely

To make the bun:

  • Punch the dough to release the air a bit.
  • Make 4 equal balls of the dough.
  • Add a little flour on the slab and flatten the balls a bit.
  • Put a 1/4 of the mixture in the middle and collect the edges to make a ball.
  • Seal the edges by dabbing fingers in milk and sealing them off.

  • Apply oil on the baking try {i used oil spray. It is wise to invest in it. comes in very handy}
  • Put all the balls on a baking tray and keep aside to rest for 15-20 min, Sealed side down.
  • Apply little butter on the buns and sprinkle sesame seeds on top.
  • Heat the oven to 180 degrees for 10 min.
  • Put the baking tray in the oven and set the timer to 40 min.
  • Once 15 min have gone by, brush the buns with oil spray/melted butter.
  • Put them in again.
  • For the last couple of min set the oven to top rod heating so that the top of the bun can become golden brown.
  • Once out of the oven let them rest for a couple of min before serving.
