Strawberry Chocolate cake- Part2

Today we come to the end of this Mega Marathon πŸ™‚ It was really wonderful to be a part of this crazy gang of girls who love their food.

I made this another version of the most awesome cake πŸ™‚ I used puree and shards in the batter and a glaze on top. It was a marriage made in heaven.

Week- 4

Theme- Crafts/Misc

Dish for Day – Cake

You shall need: [Makes about 2 cakes]

For the cake-

1.5 cup… All purpose Flour

1/3 cup… Cocoa powder

1/2 tsp… Baking powder

2.. Large eggs

1/2 tsp… Baking Soda

1/2 cup… Butter milk

1/2 cup… Butter

A pinch of salt

3/4 cup… Castor Sugar

1/2 cup… Strawberry puree

1/4 cup… Chopped strawberries

Method:

  • Heat oven to 180C.
  • Beat sugar and butter until nice and fluffy.
  • In another bowl, mix flour, baking powder, baking soda, cocoa powder and salt.
  • Add 1/3 of the dry ingredient and an egg to the batter.
  • Alternate with flour, egg and butter milk.
  • Using a spatula, mix in the strawberry puree and shards.
  • Pour in 2 lined baking moulds.
  • Bake for 25 min or until the skewer comes out clean.
  • Let it cool on the rack.
  • Make holes in the cake using a skewer that shall help to drink up the glaze.

For the Glaze-

1/2 cup… Strawberry puree

1/3 cup.. Sugar

Method:

  • Heat the strawberry and sugar in a heavy bottom pan.
  • Let it thicken properly.
  • Once done, pour spoon by spoon over the cakes.
  • The cake shall drink this up beautifully.

Stuffed Cucumbers

Dish for Day – Appetizer

You shall need: [Makes about 4]

1 cup… Roasted Red Peppers

1/2 cup.. Processed cheese [grated]

2 tbsp… Flour

Salt and pepper

2 cucumbers [Sliced, peeled, halfed and hollowed leaving a thin base]

Method:

  • Puree the roasted peppers and put them in a pan with about 2-3 drops of oil.
  • Add the cheese and flour.
  • Cook for 3-4 min or until the mix becomes dry-ish.
  • Season it and taste.
  • Let it cool completely.
  • Now using a piping bag, fill the stuffing in the cucumbers.
  • Place a cheese shard on top and serve with love.

Almond Butter Biscotti

Dish for Day – Biscotti

You shall need: [Makes about 20]

1.5 cup… All Purpose Flour

1/2 cup… Castor Sugar

1/4 cup… Brown Sugar

1/2 cup… Roasted almond slivers

1/2 cup… Butter

1… Egg

And 1 egg white slightly beaten.

1/2 tsp… Baking powder

2-3 tbsp… Milk

Method:

  • Pre heat oven to 180C.
  • In a bowl, mix flour and baking powder using a fork.
  • Add the sugar.
  • Using a spatula, mix the butter and egg in properly.
  • Now add the almonds.
  • If the mix feels too dry add few tbsp of milk. If we bake the dough too dry, it tends to crack and not hold shape.
  • Transfer on a greased tray.
  • Form a log and apply egg white all around it using a brush.
  • Bake for about 20-25 min or until it is cooked through.
  • Take it out and cut in long strips.
  • Now bake them side down for 15 min.
  • Turn the sides over and bake for another 10-12 min.
  • They should be nice and golden.
  • Transfer to a cooling rack.
  • Serve with love.

White Sauce Peppers Pasta

Since I was entertaining friends, I had to fix a quick lunch amongst a zilloin other things that I had to do. This pasta is my new fav.

Dish for Day – Pasta

You shall need: [Feeds 4]

2 cup… Boiled pasta of your choice

2 tbsp… Butter

3 tbsp… Maida

2 cup… Milk

1 tsp… Salt

1/2 tsp… White Pepper

1 tsp… Mustard Powder

1/4 cup… Mozzarella cheese

1.2 cup… Peppers of your choice sliced thin

Method:

  • In a heavy bottom pan, heat the butter.
  • Add the maida and stir it. Cook it until it gives slightly cooked smell.
  • Now add the milk and keep stirring it.
  • Once the maida and milk and mixed, add the cheese and let it cook.
  • Add the pasta and peppers and mix well.
  • Reduce the flame to low and cover with a lid and cook for 5 min.
  • We dont want the peppers to lose the body. We need them little crunchy.
  • Sprinkle oregano on top and serve with love.

Baked Burgers

I never would have thought that a day would come and I would make something I love something really quick and healthier. You might still miss the oily pattie but what the heck, I call it the lazy woman’s burger.

Dish for Day – Burger

You shall need: [makes about 2 burgers]

2… Burger buns [Cut in half]

1 cup… Boiled and mashed potatoes

Salt, paprika and pepper to taste

1/2 cup… Grated cheese

Butter [Room temp]

Sauce of your choice- I used the roasted peppers sauce

Method:

  • Pre heat oven to 200C.
  • Mix the spices on the boiled potato.
  • Spread some butter on the base portion of the burger.
  • Now put some of the potato mix on this side.
  • Cover it with cheese. -You may add tomatoes to this too
  • To the cover of the burger, spread the roasted peppers sauce.
  • Place the buns in the oven for 12 min or until the cheese has melted.
  • Serve warm

Chocolate Apricot Cup Cake

The pati just adores dried apricots. I picked this really nice and clean pack from gourmet westside the other day. Another reason to make them was that our friends were visiting up and cup cakes are just your version of saying I love guys, thanks for coming πŸ™‚

Dish for Day –Cup cake

You shall need: [makes about 10 big cup cakes]

1 cup… Maida

1/2 tsp.. Baking powder

1/2 tsp.. Baking Soda

1/4 tsp… Salt

1/3 cup… Cocoa powder

1/2 cup.. Castor sugar

1/4 cup… Brown sugar

1/2 cup… Buttermilk

1/4 cup… Oil

2… Eggs

14-15 pieces .. Chopped dried apricots

Method:

  • Pre heat the oven to 180C.
  • Add the dry ingredients in a bowl and mix with a fork.
  • Now add an egg at a time and beat it in the mix.
  • Add the oil and butter milk too.
  • Fold in the apricots and pour in the cup cake moulds.
  • Bake for 15-20 min or until the skewer comes out clean.
  • You may add 1.5 tbsp whiskey to the batter if you wish make the liquor version.

Whole Wheat and Fruit salad

Have you ever had whole wheat in a salad? I remember my mom used to boil while wheat and add some sugar in it and give us to munch on after school πŸ™‚ Since I was remembering my mom a lot I decided to make this salad. This one is for you mom.

Dish for Day –Salad

You shall need: [Feeds 3-4]

1 cup… Whole wheat [Washed]

2 cup… Water

1 … Pear [Chopped]

1 cup… Diced water melon

1 tsp.. Chaat masala

1 tsp.. Dried mint

Salt/rock salt to taste

Lemon Juice.

Method:

  • Put the wheat and water in a pressure cooker and cook for about 7-8 whistles on a full flame.
  • Once the steam has settled, open the cooker and let the wheat cool down a bit.
  • Add the fruits in a bowl and add the wheat too.
  • Dunk the spices and lemon juice as much as you like.
  • Taste to adjust the seasoning.
  • This salad tasted great both slightly warm and cold.
  • Serve with love

Eggless Muesli Bars

Does it happen to you that you land up with muesli in a jar that has been lying around for too long? I found this simple use that makes muesli last longer and uses up bits and pieces of everything that you have around.

Dish for Day –Bars

Seasonal Produce- Strawberry preserve

You shall need: [Makes 10 – 12 bars]

2 cup… Muesli of your choice

1/3 cup… Almond Slivers

1/4 cup… Raisins [Washed]

1/2 tsp… Cinnamon powder

1/8th cup.. Flour

2 tbsp… Butter

4-5 tbsp… Strawberry preserve

1 cup plus more… Organic honey

Butter to line the baking tray

Method:

  • Pre heat an oven to 180C for about 15 min.
  • In a bowl, dunk everything except honey, preserve and butter.
  • Mix with the help of a fork.
  • Now add the butter and honey, mix it well so that a clumpy mass if formed.
  • Line a baking tray with butter and spread the mix on it in a rectangle form.
  • Bake it for 25-30 min or until the mix is nice and brown.
  • Let it cool for about 2-3 hours and cut in rectangles/square and devour.

Eggless Chocolate chip and Strawberry Mug cake

Weekends are my reason to binge now. I am trying to loose weight BIG time, I need to for health reasons. I hope I can keep up the schedule I have made for myself. πŸ™‚

Dish for Day – Mug cake

Seasonal Produce- Strawberry

You shall need: [Feeds 2 if you believe in sharing] πŸ™‚

2 tbsp… Maida

2 tbsp… Castor sugar

1.5 tsp.. Cocoa powder

a pinch of baking soda

a pinch of baking powder

3 tbsp… Milk

3 tbsp… Oil

Chocolate chips

2-3 strawberries

Method:

  • Put all the dry ingredients in the mug and mix them using a fork.
  • Add the Milk and oil.
  • Mix well so that no flour is left at the bottom of the mug.
  • Now add the chocolate chips and strawberries on top.
  • Put in the microwave at full power for 2.5 min.
  • Let it rest for 30 sec before you open the microwave.
  • Serve with love.

Strawberry Jalapeno Lassi

Yippeeeeeeeeeeeee 300th post it is \m/

Jalapeno is a kind of pepper that is generally pickled. it is widely used in Mexican cuisine. And we love it in our house πŸ™‚

What do you do when your husdband scolds you for stashing the fridge with strawberries, mulberries, peas etc? You bribe them by giving them a taste of those things in the freshest from possible when the season is gone πŸ™‚

After his quest of playing cricket for 6 hours, I made this strange combination. It certainly is an acquired taste but trust me it grows on you. πŸ™‚

Dish for Day – lassi

Seasonal Produce- Strawberry

You shall need: [Feeds 1]

1 cup… Thick yogurt

2-3 tbsp… Castor sugar

1/3 cup… Strawberries [I used ones from my frozen stash]

5-6… jalapenos [Slices]

A pinch of sugar

Ice cubes

Method:

  • Easy breezy… Dunk all the ingredients in a mixer and churn churn churn.
  • Adjust the sweetness.
  • Serve cold.
